Stilton is one of the few cheeses with a Protected Designation of Origin certification, meaning it can only be called Stilton if made using a specific recipe with local milk from Derbyshire, Leicestershire, and Nottinghamshire. Today, only six licensed cheese makers in the world are authorized to craft this iconic cheese.
