Stilton, often referred to as the "King of Cheese," is one of the world’s most beloved and iconic cheeses. Its origins date back to the early 18th century, and while the recipe has evolved slightly over time, it remains a highly prized cheese. Stilton holds the rare distinction of being one of the few cheeses with a Protected Designation of Origin certification. This means it can only be called Stilton if produced using a specific recipe, from local milk sourced from three counties in England: Derbyshire, Leicestershire, and Nottinghamshire. Today, only six cheesemakers in the world are licensed to craft Stilton, which must be made in a cylindrical shape and allowed to form its own natural coat or crust. This young Stilton is typically enjoyed at around 10 weeks old. Its striking appearance, with blue veins radiating from the center, is matched by a rich, tangy flavor and smooth, creamy texture.
